5 Ultra Easy, Ultra Healthy Summer Side Recipes

The 4th of July is next week. NEXT WEEK! We are in full on summer mode! That means cookouts and picnics and evenings in the backyard with friends and lots of food! And cookout, picnic and backyard food needs to be easy. Because no one wants to slave away all day in the kitchen in the summer. Also, no one wants to spend hours on a summer day scrolling through Pinterest looking for healthy recipes. So I’ve got something for you! I put together a few of my favorite summer side recipes that you can feel GREAT about eating at your next backyard bbq.

These are some of my “go-to” recipes, because they have lots going for them.They are the ones that I make when I need to feed a crowd or just want a large portion of something healthy that I can dig into all week. Most can be made the night before, and each recipe makes a generous portion. They are all served cold (or room temp), so they are perfect for outdoor dining. And they are EASY, with simple, fresh ingredients. You can feel good that you are enjoying something both super yummy and ultra-healthy. Food that will energize you and make you feel amazing! So look to this list next time you need a healthy side to bring on the go this summer!
