Pumpkin Almond Flour Bread (Gluten Free, Dairy Free, Paleo)

Hello pumpkin season! In honor of fall and all things pumpkin, here is an adaptation of one of my absolute favorite recipes, Lemon Almond Flour Bread. I make that bread SO much and can’t believe I haven’t tried adapting it before. I may even like this version better- at least this time of year. The pumpkin puree makes this bread incredibly moist and it’s perfectly spiced with pumpkin spice of course! This will become your go-to fall favorite breakfast or snack. It’s perfect to serve at the holidays too!

Easy Homemade Granola (Sugar Free)

What are you munching on while home all day during quarantine? I’m trying to stick to my regular eating schedule, but that has always and probably always will include snacks 😊 This is my go-to quick, easy homemade granola recipe and I’m trying to keep a big batch of it around for when I need something slightly sweet and crunchy! It’s the perfect snack with fruit or yogurt and of course as a nutritious homemade breakfast cereal.

Store bought granola is typically full of sugar and honestly at this point it’s much more…

Lemon Almond Flour Bread (Gluten Free)

I am obsessed with lemons. Even before I began studying nutrition and learning about the amazing benefits of lemons, I’ve loved them. They are such a happy food! I even have a lemon tree, that is thriving, in Indiana! Indiana is known for corn not citrus, but thanks to a sun filled patio in the warm months, a 4-season sunroom for the cold months + some heat lamps, we’ve managed to keep this lemon tree alive for 6 years! I discovered that lemon trees are very charming patio decor while traveling in Italy years ago, where lemons…

Sea Salt & Caramel Nice Cream

I’m a BIG fan of ice cream.

There was a time when I ate it nightly. Yes, practically every night. It was habitual. After I put the kids to bed, the ice cream would come out and I would just serve some right up, cone and all.  (Notice how I did this after the kids went to bed. I really didn’t want to share and also didn’t want them eating all that ice cream! )

That was a long time ago, and fortunately habits can change! But I still love it. And still eat it on special summer trips to our favorite…

2-Ingredient Soft Serve Nice Cream

Oh sweet summer 🙂  How I love me some ice cream. But since I eat pretty much dairy and gluten free, I have to improvise, because I don’t believe in deprivation!

But this is no sacrifice and honestly, it doesn’t get much easier than this to make a simple, healthy, dairy free and naturally sweet soft serve! And bonus, no ice cream maker needed! This is super easy to make with either a high-speed blender or a food processor, and obviously the ingredient list is quite manageable. Just keep storing up those frozen bananas, they’re gonna go fast!

Made from just…

Healthy Almond Joy Protein Balls

It’s Halloween! So here’s my nod to this sweet, sugary holiday, without all the…sugar. It’s my healthy, low-sugar version of one of my old favorite Halloween treats, the Almond Joy. I don’t eat Almond Joy bars anymore, they are way too sweet for my taste buds these days. But candy shopping for the neighborhood kids brings back memories of that yummy combination of coconut, chocolate and almonds and I still love this combo of flavors! So, I came up with a protein bite version that my healthier self can enjoy as much as my former self loved that Almond Joy…

No Carrot Sticks: My Top 10 Healthy Snacks

Oh how virtuous it feels to snack on carrot sticks…and how unsatisfying. Don’t get me wrong, I have nothing against carrot sticks and I eat them often, but only paired with something decadent like guacamole! Otherwise, they just don’t do it for me.

So many times we think of snacking as a negative thing, but it really doesn’t have to be. And that’s good news, because as much as we may try to avoid it, snacking is a way of life now. We are on-the-go, running around and in need of energy!

There are pros and cons to snacking, but when…

Sweet Potato Chips

Sweet potato “chips” are one of my favorite snacks. They are a comfort food. Satisfying and tasty. I have “chips” in parentheses because no matter how hard I try, I can’t get them perfectly crispy or like the pics in the magazines. I don’t have a fancy slicer to get them paper thin, which I believe is what you need to get them crispy all over. But you know what? I. don’t. care. They are so good the way I make them, kind of half chewy, half crispy. I like to switch up the flavors too. You can make a…

Cashew Cream Protein Smoothie

Oh my. I want to tell you to just get in your car. Head to the store. Buy the ingredients for this smoothie. And make it. Now.

It is that good!

Not only is it delicious, but it nourishes and satisfies in the way that only a dessert-like “milk-shaky” protein smoothie can do. Because it’s got a good combo of protein, fat and natural sweetness, it will fill you up, satisfy sugar cravings and give you tons of energy to power through your day!

Cashews are one of the best ways to add creamy richness to many recipes, and work incredibly well in…
