2-Ingredient Soft Serve Nice Cream

Oh sweet summer 🙂  How I love me some ice cream. But since I eat pretty much dairy and gluten free, I have to improvise, because I don’t believe in deprivation!

But this is no sacrifice and honestly, it doesn’t get much easier than this to make a simple, healthy, dairy free and naturally sweet soft serve! And bonus, no ice cream maker needed! This is super easy to make with either a high-speed blender or a food processor, and obviously the ingredient list is quite manageable. Just keep storing up those frozen bananas, they’re gonna go fast!

Made from just frozen fruit, you can feel good about serving this up all summer long.

My absolute favorite version of this is with frozen cherries, but use whatever fruit floats your boat 😊

2 INGREDIENT “NICE” CREAM

Serves 2

Ingredients

2 frozen bananas (peel and slice bananas before freezing)

1 cup frozen cherries, berries, mango or other fruit

Optional: Toppings of choice

Directions

If the frozen fruit is rock solid, let it sit out for a bit to soften up some (but not too much!). Combine bananas and fruit in a high-speed blender or food processor and blend until smooth and creamy. If using a blender, you’ll need to work the fruit with a tamper (or another utensil if you don’t have one) and keep pushing it down into the blades. Just keep working it, it will come together! Serve immediately, or store in the freezer for later.

Serve the healthy, creamy goodness in bowls with toppings, or straight up in a gluten free cone!
