This marinated salad is dressed to impress. It features marinated ripe summer tomatoes, a generous amount of avocado, fresh basil (don’t skimp here!), red onion and feta served over top of crisp mixed greens. I grew up on cereal. Who didn’t? But in the interest of my health, I’ve given up on the processed stuff. Luckily, it’s easy to replace with a “cereal” made from protein and nutrient rich nuts and seeds and naturally sweetened with coconut, vanilla and cinnamon. I like to top with fresh berries as well!
