Pasta with Creamy Pumpkin Sauce

With the first glimpse of those little pie pumpkins at the farmer’s market, my mind starts prepping those little pumpkins for this recipe.

This is my one of my very favorite fall comfort dishes. The sauce has a very delicate flavor and is unlike any other sauce I’ve ever used on pasta. I guess it would come closest to resembling an Alfredo sauce, although I’ve never been able to eat more than about two bites of Alfredo sauce without feeling comatose due to it’s overpowering richness. Not so with this healthy pumpkin sauce! The creamy richness comes from nutrient dense…

Coconut Chia Pudding with Berry Compote

Chia pudding. You love it or you hate it. Or you just haven’t tried this recipe yet!! Seriously, if you think you’re not a fan of chia, this might change your mind! It’s not your run of the mill, bland chia pudding, because who would want to eat that?

I personally love chia pudding for a quick, easy, make-ahead breakfast, and of course, the health benefits. And this is my very favorite version, maybe because it tastes like dessert!

It’s very rich, but not overly sweet, due to the full-fat coconut milk and very berry compote, which is bursting with natural…

Grain Free Cereal

I grew up on cereal. Who didn’t? But in the interest of my health, I’ve given up on the processed stuff. Luckily, it’s easy to replace with a “cereal” made from protein and nutrient rich nuts and seeds and naturally sweetened with coconut, vanilla and cinnamon. I like to top with fresh berries as well! Enjoy!

Grain Free Cereal

Serves 1

Ingredients

2 tablespoons sunflower seeds

2 tablespoons pumpkin seeds

2 tablespoons raw almonds

1 tablespoon ground flax

1 tablespoon hemp seed

2 tablespoons shredded coconut

½ teaspoon vanilla

½ teaspoon cinnamon

Add nuts, seeds, coconut…

Sea Salt & Caramel Nice Cream

I’m a BIG fan of ice cream.

There was a time when I ate it nightly. Yes, practically every night. It was habitual. After I put the kids to bed, the ice cream would come out and I would just serve some right up, cone and all.  (Notice how I did this after the kids went to bed. I really didn’t want to share and also didn’t want them eating all that ice cream! )

That was a long time ago, and fortunately habits can change! But I still love it. And still eat it on special summer trips to our favorite…

2-Ingredient Soft Serve Nice Cream

Oh sweet summer 🙂  How I love me some ice cream. But since I eat pretty much dairy and gluten free, I have to improvise, because I don’t believe in deprivation!

But this is no sacrifice and honestly, it doesn’t get much easier than this to make a simple, healthy, dairy free and naturally sweet soft serve! And bonus, no ice cream maker needed! This is super easy to make with either a high-speed blender or a food processor, and obviously the ingredient list is quite manageable. Just keep storing up those frozen bananas, they’re gonna go fast!

Made from just…

Dairy Free Kale Caesar Salad

Ah, the ever popular Caesar salad. Always a favorite due to it’s creamy, garlicky, parmesan cheesy, bread crumb-y calorie dense goodness. So tasty, but not exactly the healthiest choice as far as salads go, and forget it if you’re ditching the gluten, dairy or have an egg allergy! Unlike a traditional Caesar, which can quickly weigh you down and trigger inflammation, this Caesar salad is perfect for cleansing the body, boosting vitality and also happens to be delicious!

I love creating healthier versions of traditional favorites that I know will fuel my body in all the good ways. This recipe…

Raw Cauliflower “Detox” Tabbouleh

This delicious take on a Middle Eastern tabbouleh salad is raw, vegan, grain-free, and full of nutrients! Bursting with fresh flavors, these super-food ingredients also support detoxification, an alkaline environment in the body, keep your blood sugar stable, decrease inflammation, and heal your gut! Traditional tabbouleh uses bulgur wheat, but I’m replacing that here with cauliflower. Because…more vegetables!

And did I mention, cauliflower prepared this way also happens to taste amazing? Years ago, amazing and cauliflower would not have made it into the same sentence, if I was writing it, but I’ve come to fall in love with cauliflower, it’s…

Kale and White Bean Soup with Lemon

I made this soup for the first time in a while the other night and was immediately reminded why I love it. My body was craving a quick healthy boost, and it was craving this soup. Soups are one of the easiest (and delicious) ways to get a lot of fresh, nutrient dense vegetables into your diet, quickly, easily and all in one bowl! This one is absolutely bursting with health (thanks, kale!). It is such a gift to your body. Tell me you don’t feel healthier just looking at the picture (and it’s not even a great picture, but you get the…

Weeknight Shrimp and Chicken Quinoa Paella

I have always thought of paella as “special occasion food”. I typically only make it if friends are coming over and I really go all out, making it in the more traditional way, including all the expensive ingredients. Traditional paellas are delicious and honestly don’t need improvement. However, weeknights that we get to sit down together as a family are special too, and this paella comes together quick enough for a beautiful weeknight dinner. I still don’t think my kids appreciate that they get to eat meals like paella on say, a Tuesday night after baseball practice, but I…
