Zesty Quinoa Salad

You want to know what’s weird? Somehow I can find no pictures of this salad. Very strange, since I am obsessed with taking pictures of my food and make this ALL the time! I’m sure to make this in the near future, so a pic will be forthcoming!! You can trust me, it’s very pretty!

Main Dish: Serves 4

Side Dish: Serves 8-10

Ingredients:

1 ½ cups quinoa, rinsed well

2 (15 oz.) cans black beans, rinsed

2 large tomatoes, diced

1 cucumber, diced

2 cups carrots, shredded

½ cup red onion, chopped

1 cup fresh parsley or cilantro, chopped

Dressing

¼ cup olive oil

¼ cup fresh lemon juice

1 teaspoon sea salt

½ teaspoon fresh ground black pepper

Add 1 ½ cups rinsed quinoa to a medium-large pot on the stove. Add 3 cups water. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes, or until liquid has been absorbed. Remove from heat and allow to cool.

While quinoa is cooking, combine ingredients for dressing. Whisk well and set aside.

Chop your veggies and herbs. Combine the chopped veggies, herbs, beans, cooled quinoa and dressing in large bowl and toss well. Add salt and pepper to taste.
