Superfood Salad with Kale and Quinoa

This is my go-to salad when I need to feed a crowd, and a personal favorite for batch cooking in general. I can make this and eat it for a few days, knowing I’m doing my body a whole lotta good! There’s not much in here that’s not a superfood, hence the name!

Kale and Quinoa Superfood Salad

Yields

8 servings

Ingredients

1 1/2 cups uncooked quinoa

1 bunch kale, finely chopped

1 bell pepper (any color), chopped

1 cup tomatoes, chopped

2 15 oz. cans black beans, drained and rinsed

1 cup cilantro, chopped

1 avocado, diced

1/4 cup olive oil

1/4 cup lime juice

1 teaspoon sea salt

1/2 teaspoon pepper

Directions

Cook quinoa according to directions, then allow to cool.

Prepare all veggies, beans and cilantro and add all, except avocado, to a large serving bowl.

Prepare dressing by mixing olive oil, lime juice, salt and pepper in small bowl.

When quinoa has cooled, toss well with veggies, beans and cilantro.

Add dressing and toss again. Add more salt and pepper to taste, if needed.

Top with avocado. Enjoy!
